Looking for fresh pasta in Bangkok, Phuket or Koh Samui ?


Finding fresh pasta that truly delivers on texture and flavor is not always easy. At Parma by Mozza, it has been a work in progress since the opening of our first restaurant in Koh Samui in December 2023.


From day one, the objective was clear: bring authentic Italian pasta to Thailand, while making it accessible and consistent across all locations. Through continuous testing, team input and, most importantly, customer feedback, the recipes have been refined over time to reach the right balance between authenticity, quality and value.


Using locally sourced flour and eggs allows us to keep a short supply chain, ensuring freshness while maintaining a strong quality-to-price ratio for our guests.


What fresh pasta actually feels like ?


Whether you're a pasta lover or not, you'll notice the difference from the very first bite.

Cooked al dente, our fresh pasta offers a has a bit of bite at first, then softens with each bite. It's this balance that makes it satisfying : neither too firm nor too soft. The sauce coats the pasta, enhancing its flavor instead of leaving you with a bland, flavorless bite. It's simple, but it makes all the difference on the plate.


At Parma by Mozza, we see pasta as a hearty and comforting dish, the kind you want to come back to again and again. That’s why we take care to prepare it properly, with homemade pasta and sauces that pair naturally, so you can enjoy every bite without feeling weighed down.

At Parma, several pasta shapes are prepared in-house, including tagliolini, tagliatelle, pappardelle, ravioli, gnocchi and reginette. Most are shaped using machines to ensure consistency, while ravioli are folded by hand for a more delicate and traditional finish.

Each shape is chosen for how it carries the sauce and how it feels in the mouth. Gnocchi, for example, are not meant to be overly soft or dry. The balance between potato, flour and seasoning is key to achieving a texture that is slightly dense but melts in the mouth, holding its shape while remaining smooth and enjoyable to eat.

Ravioli bring a different experience. The thin layer of pasta wraps around a rich filling, creating a more complete and rounded bite. At Parma, the beef ravioli with mushroom gravy, cream and parmesan, available in Samui and Phuket, have quickly become one of the standout dishes. The filling has been carefully developed to match the pasta, with just the right level of richness and creaminess to enhance the overall balance.


Signature pasta dishes across our locations


While the approach remains consistent, each location also has its own highlights.

At Parma, some dishes have naturally become favorites. Spaghetti alle vongole remains a classic choice, while lasagna continues to be a comforting and popular option across all restaurants.

In Samui, the tagliatelle with mushrooms stand out, while in Bangtao (and soon Blue Tree), the experience goes further with pasta finished directly in a parmesan wheel, adding depth and intensity to the dish. In Bangkok, truffle tagliolini offer a more indulgent option, with a more upscale taste but without being over the top.



A pasta experience built around real feedback


One of the strengths of working with homemade pasta is the ability to adapt.

Since the beginning, the recipes have evolved through constant adjustments, guided not only by the kitchen but also by guest feedback. This flexibility allows Parma to continuously improve its dishes and stay aligned with what people actually enjoy eating.

The result is a menu that feels both grounded in Italian tradition and adapted to its environment, without losing its identity.
